Sharon Bond's Wild Salmon Breakfast Bannock

Bannock Ingredients:

•    2 cups all-purpose flour
•    1 cup whole wheat flour
•    ½ cup cane sugar
•    1 tsp baking powder
•    1 tbsp kosher salt
•    1 tbsp yeast
•    4 cups warm water/milk (depending on if you want vegan)
•    canola oil

Salmon Ingredients:

•    4 oz salmon filets
•    salt
•    pepper
•    1 small jar of Saskatoon berries or blueberries
•    1 cup apple cider vinegar or champagne vinegar
•    ¾ cup maple syrup
•    celery leaves

Ice cream Ingredients:

•    Soopolallie berries
•    Fine sugar
•    Garnish with blueberries and dried Saskatoon berries

Bannock Directions:

1.    Place all dry ingredients into a large mixing bowl. Mix ingredients with a spatula.
2.    Make a well in the centre and add warm water and mix it together until stiff. Let sit for 5 minutes so dough can rise.
3.    Place some flour on a cutting board and pour 2 cups of the Bannock mixture on top of the flour and mix, creating a medium-sized ball until smooth.
4.    Place pan on medium-high heat, add oil once pan is hot. Tear off some of the dough (softball size) and flatten it out. Place the dough in the pan and fry until golden brown on both sides.

Salmon Directions:

1.    Begin by adding a couple of tablespoons of the Saskatoon berries to a pan on low simmer, add 2 tablespoons of apple cider vinegar, 2 tablespoons of maple syrup and a small amount of salt and pepper to taste. Stir with a spatula and let it cook for a few minutes until the berries start to break down.
2.    Heat a large pan over medium-high. Add olive oil to the pan once hot. Place the salmon filets in the pan, skin side down and cook for 3-5 minutes on both sides. Add salt and pepper to the salmon and a pinch of crushed celery leaves.

Ice Cream Directions:

1.    Using a stand mixer, place a teaspoon of the soopolallie berries and 3 tablespoons of ice-cold water into the mixing bowl and mix for 1 minute.
2.    Add in a tablespoon of sugar and one tablespoon of ice-cold water and mix for a couple of minutes until it foams.
3.    Stir with a spatula.

Plating:

1.    Place the Bannock on a plate with the salmon filet. Then drizzle the berry mixture over the salmon.
2.    Place the ice cream in a bowl and garnish with blueberries.
