Louie Lui's Red Chili Oil Wontons

Ingredients: 

  • 1 package of premade Wontons 
  • 1 lb Ground Pork 
  • ½ tbsp Salt 
  • ½ tbsp Sugar 
  • 1 tbsp Cornstarch 
  • 1 tbsp Chicken Powder 
  • 1 tbsp Soya Sauce 
  • 1 tbsp Coconut Wine 
  • 1 tbsp Sesame oil  
  • 1 Green Onion 
  • 1 Egg 
  • 1 oz Black Vinegar 
  • 1 oz Garlic and Sesame Oil  
  • 1 oz of Chili Oil  

Instructions: 

Prepare the ground pork in a large bowl. 

Add sugar, salt, cornstarch, chicken powder, soya sauce, coconut wine, sesame oil and green onions.  

Add egg and mix in the ingredients.  

Pour a little drop of water and continue to mix all the ingredients together. 

Use ½ tbsp of the ground pork mix and place in the centre of the wonton. 

Run a wet finger down the two edges of the wrap. Then fold your wonton in half and connect the dry sides to the wet sides to seal the wonton.  

Use your thumb and index finger to seal the wrap together.  

With the long side facing up, place your middle finger in the middle of the wonton so you have the two corners facing to the sky. Then attach the two comers together.  

Once you’ve prepared all your wontons, place in a pot of boiling water for 10 minutes. 

Check the wonton temperature. The wontons will be fully cooked at 180 degrees Fahrenheit. 

Plating: 

Place four wontons in a bowl.  

With a ladle pour 1 oz of black vinegar, 1 oz of garlic and sesame oil, and 1 oz of chilli oil on top of the wontons. 

Garnish your wontons with thinly sliced cucumber.
