Green Mango Salad

Ingredients:

2 green mangoes, peeled and shredded into ½ inch strips

1/2 cup peanuts, roasted and crushed

Cilantro (Vietnamese coriander) or mint, to taste and chiffonade

Beef or squid jerky (optional)

Dried shrimp, reconstituted as needed (optional)

Fish sauce caramel:

3/4 cup granulated sugar

1/2 cup fish sauce

1 cup water

Accompaniment (optional):

Sesame rice crackers (banh trang me)

Directions:

1. Make caramel: in a small saucepan over medium-high heat, bring to boil sugar, fish sauce, and water. Cook until thickened, approximately 20 to 30 minutes, stirring occasionally. Remove from heat and cool until reduced to syrup consistency, approximately 20 to 30 minutes more.

2. Toss salad: in a large bowl, toss mango with caramel, peanuts, cilantro, and beef jerky or shrimp if using.

3. Serve with sesame rice crackers.
