Grilled Speck Wrapped Figs with Rosemary Honey

Ingredients:

¼ cup honey

3 sprigs rosemary, roughly chopped

6 black mission figs, sliced in half

4 to 6 thin slices of speck

2 ounces blue cheese, broken into 12 pieces

Olive oil, for brushing

Directions:

1. Place the honey and rosemary in a small sauce pan. Bring to a simmer and cover. Allow to rest.

2. Slice speck into 1-inch long strips. Press the cheese into the centre of the fig. Wrap the fig horizontally with a strip of speck.

3. Heat a grill pan over high heat. Brush the figs with oil and place on the grill. Cook, just until grill marks begin to appear, about 1 1/2 minutes. Turn and repeat with opposite side.

4. Transfer to a serving platter, and lightly drizzle with honey. Serve warm or at room temperature.
