Tommy Schneider's The Tommy’s Special pizza

Pizza Ingredients:  

  • Premade pizza dough 
  • ½ cup Mozzarella Cheese 
  • 3 slices Prosciutto 
  • 10 Burrata Chunks 
  • ¼ cup Arugula 
  • ½ tsp Lemon Zest 

Spicy Honey Ingredients: 

  • 1 cup of Honey 
  • 2 tsp Apple Cider Vinegar 
  • 1 tbsp Dried Chilli Flakes 
  • 1 tbsp Chili Powder 

Instructions: 

Spicy Honey: 

Preheat saucepan on medium heat. 

Add the honey and dried chilli flakes, stir, and bring to a simmer over medium-low heat. 

Simmer the mix for 3-5 minutes, stirring occasionally. Then remove from heat and stir the apple cider vinegar into the hot honey sauce.  

Pizza: 

Preheat your pizza oven to 565 degrees Fahrenheit. If you’re using a home oven, preheat it to 500 degrees Fahrenheit. 

Using premade pizza dough, start to stretch the dough. Go around the dough with your fingers while leaving an inch on the outside. Then flip the dough and continue to form the crust. Pick up the dough and toss it. When you toss the dough, make a fist, and keep your fists closer to the outside of the dough. This will help to prevent you from breaking the dough. 

Place the Spicy Honey sauce into a squeeze bottle and make a couple of circles, starting from the centre of the dough and go around till it almost reaches the edges. 

Add shredded cheese to the pizza dough.  

Place pizza into the oven for 10-15 minutes.  

When the pizza is cooked, using a pizza cutter, cut the pizza into 4 slices. 

Plating:  

Lay slices out on a round plate and connect the slices.  

Add prosciutto. 

Measure 1 tsp per burrata chunk and place them on each slice, plus a little more. 

Add arugula and spread across the pizza.  

Add lemon zest.  

Add the Spicy Honey sauce and make a couple of circles, like you did on the crust of the pizza.  

 

Prosciutto Pear Pizza

Pizza Ingredients: 

  • Premade pizza dough 
  • ½ cup Mozzarella Cheese 
  • 3 slices Prosciutto 
  • 1 Pear 
  • ¼ cup Caramelized Onions  
  • 1 tbsp Pine Nuts  
  • ¼ cup Arugula  
  • ½ cup Mozzarella Cheese 
  • 2 tbsp Gorgonzola Cheese or Parmigiana Cheese 
  • Balsamic Reduction  

Honey Mascarpone Dressing Ingredients: 

  • ½ cup Mascarpone cheese 
  • ¼ cup Honey 

Hot Honey Ingredients: 

  • 1 cup of honey 
  • 2 tsp Apple Cider Vinegar 
  • 1 tbsp Dried Chilli Flakes 
  • 1 tbsp Chili powder 

Instructions: 

Honey Mascarpone: 

Place all the ingredients into a saucepan on medium heat. 

Stir the sauce until the creamy mascarpone cheese is blended and smooth. 

Scoop sauce into a sauce bottle. 

Hot Honey: 

Preheat saucepan on medium heat.

Simmer the mix for 3-5 minutes, stirring occasionally. Then remove from heat and stir the apple cider vinegar into the hot honey sauce.

Add shredded mozzarella cheese to the pizza dough. 

Add thinly sliced pears, caramelized onions, and pine nuts.  

Once all the ingredients are added, place into the oven for 10-15 minutes.  

When the pizza is cooked, using a pizza cutter, cut the pizza into 4 slices. 

Plating: 

Lay slices out on a round plate and connect the slices. Add prosciutto, arugula, gorgonzola cheese. 

Add the Balsamic Reduction to a squeeze bottle and make a couple of circles.  

Add the Hot Honey mix to a squeeze bottle and make a couple of circles.
