Granola

In the Grove

Makes: approximately 2 cups

Prep time: 10 min Cook Time: 40 min

Ingredients:

1 cup rolled oats

1/3 cup pistachios, shelled

2 tbsp pumpkin seeds, shelled

1/2 tsp kosher salt

4 tsp brown sugar

1 tbsp maple syrup

 4 tsp coconut oil

 1/4 cup dried sour cherries

Directions:

1. Make dry mixture: in a large bowl, mix together oats, pistachios, pumpkin seeds, and salt.

2. Make wet mixture: in a small saucepan over low heat, warm sugar, syrup, and coconut oil until sugar dissolves. Fold into dry mixture, making sure to evenly coat.

3. Cook granola: preheat oven to 300°F. Spread granola on parchment lined baking sheet and bake until dry and golden, stirring occasionally. Bake for 40 minutes. Toss with cherries.

4. Cool completely before storing in airtight container.
