Scallop Ceviche

Ingredients:

¾ lb sea scallops, diced

3 limes, zested and juiced

1 red pepper, diced

1 cup jicama, diced into ¼ inch cubes

1/3 cup red onion, finely diced

½ cup cilantro, chopped

1/2 jalapeno, seeded and finely diced

1/3 cup olive oil

Directions:

Toss the scallops with the lime zest, lime juice, jicama, red onion, red pepper, cilantro, jalapeno, oil and salt. Serve immediately or refrigerate until ready to serve.
