Sichuan Green Beans

Ingredients:

1 tsp toasted Sichuan peppercorns, 1/2 left whole and 1/2 crushed

6 dried chili peppers

4 cloves garlic, minced

1 tbsp minced ginger

2 stalks scallion, thinly sliced

1 lb green beans, trimmed

1 tsp granulated sugar

Directions:

1. Make sauce: in a medium skillet over medium-low heat, heat 2 tbsp oil and toast whole peppercorns and dried chili until fragrant, stirring frequently. Stir in garlic, ginger, and scallion; sauté until fragrant.

2. Cook green beans: preheat oven to broil. In a large bowl, toss green beans with oil to coat; season with salt and pepper. Arrange on parchment lined baking sheet and broil until charred, approximately 2 to 5 minutes.

3. To serve, toss beans with chili oil, add sugar and remaining 1/2 crushed peppercorns.
